Broccoli is such a wonderful vegetable. It has a plethora of health benefits – lowers your cholesterol especially when steamed, detoxifies your body, an excellent source of vitamin D, lessens the impact of allergy causing substances in the body – I could rant away at its benefits. However most of all I enjoy the beautiful green color.
So this soup is real simple. It uses the freshest ingredients and does not require too much time. Ideal for a light weeknight dinner especially on those days when you just get back from work and need some quick warm, nourishing and tasty soup (NOT the powdered soup packs to be boiled using hot water).
Ingredients (Serves 2):
1 large broccoli
I medium sized onion
7-8 gloves of garlic crushed (I love lots of garlic in my soup 🙂 )
Dried Italian herbs – whichever you like or have available in the house
1 spoon of extra virgin Olive oil
Salt and pepper to taste
As condiments (depending on your preference)
Crumbled blue cheese or reduced fat feta cheese
Roasted Almond flakes
Here are the steps:
Blanch the broccoli after cutting it into small florets. The good part of this soup is that you can use the stems of the broccoli as well since they will be used up. Roast or stir fry the crushed garlic and onion in the olive oil and Sprinkle some dried Italian herbs over the garlic and onion while roasting or stir frying . Continue until they turn golden brown. Blend the blanched broccoli, roasted garlic and onions in a blender until it turns into a thick green paste. Pour over the mixture in a deep pan adding some water in it (adding as much water as the consistency you desire) and bring to a boil. Add salt and pepper as taste. Serve with some crumbled blue cheese or feta cheese and some roasted almond flakes. One might find blue cheese very pungent but those who like it, it gives a nice punch to the blandness of broccoli. Also feta is very salty so ensure you add less salt in the soup to avoid a very salty soup.
