Rice Cake

Okay I know what you are thinking when you read the header above – This recipe is perhaps steamed white rice shaped into a round object. Well I must be losing my mind if I post that 🙂  Let me tell you what I have done. This is a fun recipe that uses brown rice, spices (read cardamoms, cinnamon), honey, yogurt and nuts(read almonds, raisins, pecans, pistachios ). Simple ingredients I know. Perhaps you think I am churning out granola and using rice instead of oats.So enough said of what this is NOT.  This one’s gonna be “No Bake”, “No Egg”.Just use the refrigerator. Also it was more of a trial and error dish and it was fun doing so 🙂

Ingredients:

1 cup brown rice

1 tablespoon of honey

2-3 cardamom seeds

1/2 teaspoon cinnamon powder

A handful of raisins

For the icing:

1 cup plain yogurt (Use Greek yogurt if you want a more creamy texture. I didn’t have Greek at home so just used the plain one I had)

1 tablespoon of honey

Nuts – almonds, pecans, walnuts, pistachios (use whatever you want. I had almonds and raisins so used those)

1 teaspoon of vanilla extract

Cook the rice with the cardamoms and cinnamon powder. Once cooked let it cool for a while. Mix honey and raisins in the rice after cooling. Take a deep bowl and set the rice in it beating it with a spatula. You want the rice to get sticky with the honey and the grains to be stuck to each other as much as possible. Keep aside in the freezer for about 20-30 min. We don’t want the rice to turn icy. Just cold and set.

Separately whisk together the yogurt, vanilla, nuts and honey in a bowl. Remove the rice from the freezer and turn the bowl upside down on a plate so that the rice comes out easily. Evenly spread the yogurt icing. Refrigerate it for a while if not eating immediately. Else cut and eat or just scoop it out using a spoon as if eating pastry cake 🙂
