Carrot Ginger Soup

You know those times when you have a weird and hoarse feeling in your throat. Those times you wish you could somehow scratch your throat and perhaps stop the irritating feeling. I am talking about those times when you have a sore throat πŸ™‚ Well this soup is just for those times and it gives a good relief to your throat. And hey ginger is said to be a natural remedy for sore throats as well.

Ingredients (made 4 bowls):

4-5 carrots cut into big chunks

1 tomato cut into cubes

1 piece of ginger grated (about 2 teaspoons)

1 onion sliced

5-6 cloves of garlic crushed

1 spoon olive oil

Salt and ground pepper to taste

Chopped walnuts for garnishing

Heat water in a deep pan. Boil the carrots, tomato and ginger until the carrots are soft and you can pass a fork through them. The water should be just enough to have the carrots submerged in the water so that we can use the ginger flavored water after boiling as broth to dilute the soup. Simultaneously in a non-stick pan, add 1 spoon of olive oil and sautΓ© the onions and garlic until they brown. Once done, blend all the ingredients in a blender. Add the water in which the carrots were boiled to make the soup thinner. Bring to a boil. Adjust salt and pepper based on your preference. Garnish with chopped walnuts. Serve!! (I think feta cheese would be a good condiment as well but I did not have it at home so used chopped walnuts which tasted great nevertheless :))
