Garlicky Tomato Spread

This ones gonna be a simple spread (read substitute for butter that I use at times especially for a spread on my bread with soup)


A bunch of cherry tomatoes or use normal tomatoes cubed

One whole bulb of garlic

1 tbl spoon of olive oil

Fresh basil leaves or just dried Italian herbs if you don’t have any basil

Peel the cloves of garlic. Take a baking pan and put in the garlic, tomatoes, basil leaves/dried herbs and olive oil. Roast for about 30 min at 220 degree centigrade. Once roasted, they turn into a squishy squashy mix. Using a fork try to mash it more and make a thick coarse soft mixture. Cut some focaccia or ciabatta or bread of your choice. Spread evenly across it. Bake for about 10 min until the bread is a little brown and toasted. Serve with your soup or enjoy it just like that
