Carrots, parsnips and ginger – These are the 3 root vegetables I used to whip up a simple soup. Boiled all these 3 together in salt water until soft. The good part was that the ginger was so strong that it added a terrific flavor that seeped into the carrots and parsnips and balanced their sweetness. Then blended them and added water to adjust for the consistency. Finally garnished with some crumbled feta cheese.
