Some time this week last year in 2012, I dabbled with the idea of starting this blog – To document my learnings in the kitchen, figuring out how ingredients behave, trying to keep my food healthy but at the same time flavorful and just enjoying the overall journey. There have been times when I have tried concocting some food in order to vent my emotions from a bad day at work or remembering some friends or just for the plain simple reason to explore something new. This blog has been part of it all and it has definitely helped discover so many things in me that I never knew existed. All this along with the wonderful blogs, pictures and talented folks I have discovered through blogging – It has amazed me, made me feel there is still so much to learn out there and the possibilities are endless. Thanks to everyone who has made this possible 🙂
So I decided to do a series of posts using simple ingredients that are super flavorful, nothing fancy and available everywhere. It is their unique flavor that adds the extra zest or taste and transforms the dish completely. At the same time keeping it all very simple and quick&easy to make. In this post, Lemon is the star ingredient . That along with mustard seeds, curry leaves, chilli and peanuts adds a spicy lemony taste that totally gives a strong kick once you put it in your mouth. I used organic glass noodles that I had picked up from the Pasarbella Market but I can think of vermicelli as a great option as well. This is vegetarian and vegan as well. So do try it out if you are feeling like making something hot and spicy and lemony. It is good for a quick weeknight meal with a few ingredients is all that you require. 🙂
Ingredients for Spicy Lemon Noodles:
80 grams good quality glass noodles (Vermicelli can be a good substitute I think)
Juice of 1 lemon
Grated lemon zest of 1 lemon
1/2 teaspoon mustard seeds
A few curry leaves – Dry or fresh will do
A handful of peanuts – Use as much peanuts you like
1/2 teaspoon of crushed red chilli ( chill flakes should do as well)
1/4 teaspoon grated ginger
Salt to taste
Heat oil in a pan . Add in the mustard seeds, ginger, curry leaves and crushed red chilli. Let it crackle for a bit. Next throw in the peanuts and grated lemon zest. Saute for a few minutes. Simultaneously boil the glass noodles in hot water . Once cooked toss the warm noodles in the spicy peanut mix until evenly coated on the noodles. Switch off the heat and pour over the lemon juice – The juice gets infused in the warm noodles and it has a very lemony flavor. You can see the lovely lemon juice glistening over the noodles below. Serve immediately.
Note: If not serving immediately do not pour over the lemon juice in the mix else the noodles and peanuts become soggy and taste very lemony. A little leftover (that had the juice poured in), I ate the next day became soggy and too lemony in taste , so you may want to pour the lemon juice just before serving.
